Melissa officinalis (Lemon Balm)

Lemon Balm is a pleasing lemon scented member of the mint family. A small bushy perennial with dark green les and small yellow flowers July though September. When it is bloom bees love this plant, drawn to nectar rich flowers. Lemon balm should be cut back after flowering to keep it from looking ratty and to prevent prolific spread by seed.
Lemon balm is a most useful herb in tea, herb, and culinary gardens. Herbal lore abounds around this herb that has been used for some 2,000 years. A pleasant and soothing tea can be made of leafs, or leafs can be added into summer lemonade. Fresh leafs can be added to salads, both green and fruit, and are well pared in marinates with fish, poultry and pork. Many herbal cosmetic preparations are improved by the addition of Lemon Balm.
